Margarita cupcakes are delicious, slightly boozy, vanilla lime cupcakes, brushed with tequila and topped with a tequila lime buttercream.

These margarita cupcakes are perfect for when you want something sweet but don’t want to make an entire cake, or like me you don’t want an entire cake sitting around your house. These cupcakes have a touch of lime and tequila and will go great with your cocktail.

  • you can make these margarita cupcakes as boozy (or not boozy as you want). I find between 2-3 tbsp of tequila in the buttercream is about right.
  • Using an ice cream scoop gets you the perfect amount of batter and even sized cupcakes.
  • I’m using sanding sugar to create a sparkly effect and replicate the look of a salted rim, but you can substitute any sprinkles you want or just use lime zest or lime wedges.
  • I love using vanilla bean paste in all of my white cake and cupcake bases. I love seeing all the specks of vanilla in the cake and the flavor is great. These are a few of my favorite brands: Nielsen-Massey, Heilala and LorAnn. You can also substitute vanilla extract 1:1

Ingredients
  

Cupcakes
  • 1 ½ cups all purpose flour
  • 1 cup granulated sugar
  • ½ tsp salt
  • 1 ½ tsp baking powder
  • ½ cup buttermilk
  • 2 large eggs
  • ¼ cup vegetable or canola oil
  • 1 tsp vanilla bean paste or vanilla extract
  • zest + juice of 2 limes
  • ¼ cup salted butter, melted and slightly cooled (1/2 stick)
  • 2 tbsp tequila
Margarita Buttercream
  • 1 cup salted butter, softened (2 sticks)
  • 5 cups powdered sugar
  • 2-3 tbsp tequila
  • juice of 1 lime
  • ½ tsp vanilla bean paste or vanilla extract
  • pinch salt
  • lime zest + white sanding sugar for decoration

Instructions
 

Cupcakes
  • Preheat the oven to 350°. Line a muffin tin with cupcake liners and set aside.
  • Combine flour, sugar, salt and baking powder in a large mixing bowl.
  • In a separate bowl combine the buttermilk, eggs, oil and vanilla extract.
  • Add the liquid to the dry ingredients and beat until smooth.
  • Add the lime juice, lime zest and melted butter and mix just until combined.
  • Fill the cupcake liners 3/4 of the way full. Use an ice cream scoop if you have one to portion equally. Bake 18 minutes.
  • While the cupcakes are still slightly warm brush the tops with tequila. Move the cupcakes to a cooling rack to cool completely before frosting.
Margarita Buttercream
  • Beat the butter on medium-high about 2 minutes or until light and fluffy.
  • Slowly mix in the powdered sugar.
  • Add the tequila, lime juice and salt. Start with 2 tbsp of tequila and add to taste. Beat until combined.
  • In a shallow bowl or plate combine sanding sugar and lime zest. Using a table knife or a small straight cake spatula frost the cupcakes with buttercream and then roll the edges in the sugar zest mixture.
